Make a proper types directory

## Problem
The current number of exported interfaces is a bit much, and a bit of a mess. We should move these interfaces into a `.d.ts` files for organization's sake.

## Done
- New types folder
- As many models as possible are defined in `.d.ts` files

## Notes
- Probably be best to wait for #2 however it is not a hard blocker
