How to override a var from CLI

I'm struggling to understand something that should be simple... I want to run task example EXAMPLE=foo, but I can't figure out how to do it. I tried to follow the docs but I think it's wrong/broken? https://taskfile.dev/docs/guide#variables

Here's what I tried:

With vars

version: "3"
tasks:
  example:
    vars:
      FOO: foo
    cmds:
      - echo {{ .FOO }}

# Expected: foo ✅
❯ task example 
task: [example] echo foo
foo

# Expected: bar ❌
❯ task example FOO=bar    
task: [example] echo foo
foo

❯ FOO=bar task example   
task: [example] echo foo
foo

With env

    env:
