[BUG] Metadata field serialization in Hyperswitch UCS tunnel

Bug Description

Currently the metadata field is only filtering string values insted of sending all types.

Expected Behavior

Hyperswitch should send all type values to UCS.

Actual Behavior

Currently the metadata field is only filtering string values insted of sending all types.
